Crock Pot Brisket Sandwiches
- 5 Lbs. beef brisket
- 1 -2 Cups strong coffee
- 1 Bottle of your favorite barbeque sauce
Place brisket in heavy-duty foil or covered roasting pan. Pour coffee over meat and seal or cover with lid. Bake at 200 degree oven for 16-24 hours. Remove from oven and pour off all liquid. Remove all fat and shred into a crock pot. Mix meat well with your favorite barbeque sauce. Serve with warm rolls or hamburger buns. Makes approximately 20 sandwiches.
Bacon-Grilled Jalapeno Poppers
- 4 Oz. Cream cheese
- ½ Cup shredded sharp cheddar or Monterey jack cheese
- ½ Cup frozen corn, (or kernels from one ear of corn)
- 2 Tbsp. Minced onion
- 2 Tbsp. Chopped cilantro
- 1 Tsp. Garlic salt
- 6 Oz. Regular sliced bacon-cut in half
- 8 jalapenos, cut in half lengthwise and removed of seeds
Mix first six ingredients in a bowl. Place about 2 teaspoons of mixture in each pepper half. Wrap each pepper with a slice of bacon and place on a medium-/low-heat grill. Close the grill lid or cover your coals for approximately 20-30 minutes, depending on your heat. Ideal temperature is 350 degrees. The bottoms will be crunchy and the peppers will be cooked. Makes 16 poppers.
Munchie Crunchie Sweet and Spicy Trail Mix
- 3 Cups Crispix cereal
- 5 Cups Tostitos tortilla chips
- 1 Bag microwave popcorn, popped
- 1 ½ Cups pretzels
- 1 Cup craisins
- 1 Cup pecans, or mixed nuts
- ½ Cup butter
- ½ Cup brown sugar
- 1 Tbsp. chile powder
- 1 Tsp. cayenne pepper
- ½ Tsp. cinnamon
Mix first six ingredients together in a large roasting pan. Combine remaining ingredients in a small sauce pan. Bring to a boil. Pour over dry ingredients, mixing well. Bake at 250 degrees for one hour, stirring every 20 minutes. Pour onto foil or wax paper while hot. Store in airtight bags. Makes approximately 10 cups.
Gooey Chocolate Brownies
- Box brownie mix, prepared per box instructions
- 36 caramels
- 3 Tbsp. Whipping cream
- 1 ½ Cups chocolate chips
- ½ Cup chopped pecans
Preheat oven to 350 degrees. Spray a 9-inch baking pan with cooking spray and flour. Mix brownies as directed on box. Pour half of the batter in the prepared pan and bake for 16-18 minutes. Microwave caramels and cream in a microwave-safe bowl until melted, about 2-3 minutes. Pour caramel over partially baked brownie.
Sprinkle with ¾ cup of the chocolate chips and 1/4 cup of the pecans. Drop remaining brownie batter by small spoonfuls onto caramel layer. Sprinkle with remaining 3/4 cup chocolate chips and 1/4 cup pecans. Bake another 30 minutes. Cool completely before cutting. Makes 24 bars.
