Take the stress out of entertaining with this easy recipe. Fire up the grill or a grill pan and you've got a tasty salad in no time.

Grilled Portobello Mushroom Salad

Prep time: 15 minutes

Cooking time: 10 minutes

Serves four. 



  • 1 package of mixed greens (4-6 oz.)
  • 4 medium portobello mushrooms
  • 4 oz. goat cheese, crumbled
  • ¾ cup toasted pine nuts
  • 2 Tbsp. balsamic vinegar
  • ½ cup olive oil
  • 1 Tsp. dried Italian herbs


Coat each mushroom cap with olive oil, vinegar, and herbs. Place on a hot grill or in a hot grill pan for 5 to 8 minutes per side, until lightly browned.

When cooked through, remove from heat. Divide greens between four plates. Top each salad with a mushroom, cheese and pine nuts. Drizzle more olive oil if needed.
