Beat the summer heat with these easy summer cocktails. Adding fruit to drinks is both refreshing and delicious. While tasty as adult cocktails, these drinks are equally pleasing without alcohol. Below are a few tips to get you started:

• During this time of year, fresh fruit is flavorful, so I choose what’s in season for my drinks.

• If I can’t find fresh fruit, or I want my drinks to stay especially cold, I use frozen fruit. If you are using frozen fruit and need a little sweetness, make a simple syrup to sweeten the drink.

• To make simple syrup, mix 1 cup water and 1 cup sugar in a medium saucepan over low heat until it comes to a boil and the sugar is dissolved. Allow mixture to cool, then store in a glass jar.

Frozen Watermelon Daiquiri

Frozen Watermelon Daiquiri

3 cups cubed watermelon

1 cup ice

8-10 mint leaves

2 oz. simple syrup

2 oz. lime juice, or the juice of a small lime

6 oz. light rum (optional)

Blend all ingredients in a blender until smooth. Makes 2 drinks.

Mimosa Bar

1 bottle of chilled sparkling wine, sparkling water or lemon-lime soda

3 containers of frozen fruit (I used mango, watermelon and mixed berries)

Orange juice/simple syrup (to taste)

Puree the fruit in a blender with a little simple syrup and orange juice until it is pourable, but still thick. Now your guest may choose their fruit juice, top it with a little bubbly and enjoy the afternoon.

Pineapple/Orange Sangria

6 cups Sauvignon Blanc (optional)

½ cup Triple Sec (optional)

6 oz. pineapple juice

½ cup simple syrup

1 cup ginger ale or club soda

½ orange, sliced

1 cup pineapple chunks

In a pitcher, combine all the ingredients except the soda. Refrigerate until chilled. Just before serving stir in the club soda or ginger ale. Makes 6-8 servings.

Grapefruit Rosemary Daiquiri

Grapefruit Rosemary Daiquiri

3 oz. grapefruit vodka (optional)

6 oz. grapefruit juice

2 oz. simple syrup infused with rosemary (just add a few rosemary sprigs to syrup as it boils)

2 oz. lime juice, or the juice of a small lime

Mix ingredients together and pour over a glass of crushed ice. Garnish with a grapefruit wedge and sprig of rosemary. Makes 2 drinks.
