This Father’s Day, serve up something prepared by the entire family. These “pops” are fast, easy and refreshing, something even children under 10 can help with. The hardest part is being patient enough to wait for them to freeze.

There are a variety of molds on the market, but using different sized paper cups works just as well. A small silicone mold is the perfect size for young toddlers. And ice cube trays may also be used to freeze extra Popsicle mix for summer beverages such as ice tea, iced coffee, or lemonade.

Strawberry Lemonade Pops

6 ounce frozen pink lemonade concentrate

1½ cups cold water

8 ounces fresh strawberries (about 10)

Puree all ingredients in a blender. Pour mixture into molds or 3-ounce paper cups. Insert wooden Popsicle or lollipop sticks. Freeze until firm, about four hours. Makes 6-8 pops.

 

Mango Basil PopsMango Basil Pops

2 ripe mangos – peeled, seeded, chopped

Juice of one large lime

1 cup cooled simple syrup – (heat 1 cup water with 1 cup sugar until clear)

1 Tbsp. finely chopped basil

In a food processor, puree mangos, lime juice, and syrup. Stir basil in by hand.

Pour mixture into molds or 3-ounce paper cups. Insert wooden Popsicle or lollipop sticks. Freeze until firm, about four hours. Makes 6-8 pops.


Chocolate Dipped BananasChocolate Dipped Bananas

3 medium bananas (not over ripe)

¾-1 cup melted chocolate almond bark

Nuts, coconut, cookie crumbs, crushed candy – for sprinkling

Cut bananas in half and insert Popsicle sticks. Dip in chocolate coating and sprinkle with favorite topping. Freeze for several hours. Makes 6 pops.

Rocky Road Fudge Pops

1 box Instant Pudding Mix (3.9 ounces)

2 cups cold milk

½ cup mini marshmallows

½ cup chopped nuts

½ cup chocolate cookie crumbs

Beat pudding mix and milk with a whisk for 2 minutes. Pour into molds or 3-ounce paper cups. Top with marshmallows, nuts, and cookie crumbs. Freeze until firm. Makes 6-8 pops.

 

Coconut Lime PopsCoconut Lime Pops

14-ounce can of coconut milk – found in the Asian food section of grocery stores

Juice of one large lime

Zest of one lime

¼ cup honey

¼ cup shredded coconut

Puree all ingredients in a blender. Pour mixture into molds or 3-ounce paper cups. Insert wooden Popsicle or lollipop sticks. Freeze until firm, about four hours. Makes 8-10 pops.

2 cups Greek-style plains yogurt

1 cup of assorted fresh or frozen berries

½ cup honey

Blend all ingredients in a blender. Pour mixture into molds or 3-ounce paper cups. Insert wooden Popsicle or lollipop sticks. Freeze until firm, about four hours. Makes 6-8 pops.
